Guar gum is a natural vegetable gum extracted from the endosperm of the seeds of the legume plant Cyamopsis tetragonolobus. It functions extremely well as a thickener, stabilizer, and suspending agent in various food applications. It can be used in a wide variety of foods with a reduced inclusion rate compared to other thickening agents.
