Agar agar is natural macromolecular polysaccharide substance extracted from Gelidium, Gracilaria, and related red seaweed which grow in nearly all seas of the world. Agar agar is hydrophilic colloid which is insoluble in cold water but soluble in hot water. With perfect property of coagulability and stability, agar agar can be used in food industry as gelling agent, thickening agent, curing agent, suspending agent emulsifying agent, preservative and stabilizer.
