Erythritol is a natural low-calorie sweetener, typically extracted from natural sources such as fruits and fermentation by-products. It has a sweet taste similar to ordinary sugar, but its calorie content is very low because it is only partially metabolized after absorption in the human body, and most of it is excreted in the urine without being consumed. Its use in food does not cause significant blood sugar and insulin reactions. Therefore, it is widely used as a sugar substitute or sweetener, especially in the production of low-sugar or sugar-free foods and beverages.
